I love zuicchini but this was completely flavor less. I made some with onion and some without and the only difference is that the ones with onion tasted like eating a cooked onion and still no other flavor. I even sprinkled them with grated romano cheese to give it some taste.

This recipe was SO easy and delicious. I made a second batch exchanging squash for the zucchini and served both styles side by side, they were very popular!!

I have almost the same recipe only using yellow summer squash, but we call them squash fritters. They are a terrific dish as part of a summer vegetable dinner with tomatoes, okra and fresh corn.

My husband and I made these the other night, and they were the best zucchini pancakes ever. If you like potato pancakes but don't want the starch, this is a great substitute. Full of flavor, and a great texture. Tip: make sure the oil is hot enough so that you can get a nice crisp on the outside.

If you are into texture and veggies, then this is your dish. I made these little lovelies, and pancakes took on a whole new dimension. They were crispy and fluffy and the zucchini wasn't lost in the cake. I will add some parm are asiago next time, not that it is necessary.

these came out really good. simple and easy. i put the salt on the grated zucchini and left it in the colander for about 15 min before mixing in the rest of the ingredients and the batter was perfectly thick.

I made these as a side dish for dinner after seeing Ina make it on her show. The recipe was quick, easy and yummy. My 2 year old son devoured several of the pancakes and I am always trying new ways to get him to eat his veggies. This one is my new favorite!
