    My dad put the shredded zucchini in a colander and sprinkled with salt. He let them drain for 15 minutes and a lot of liquid came out. The rest of the recipe was followed except for adding some Mrs. Dash. For more kick serve with homemade tsatziki (cucumber yogurt dip. They are addictive!

    I made these delicious savory pancakes last night (1/26/10 after seeing Ina's show a couples days prior. This is such a simple recipe. These pancakes are not only delicious, they're very light too. I replaced 3 tablespoons of flour with cornmeal simply because I like cornmeal. I'm in love with these pancakes. I will make them again....soon!

    This recipe is sooooo yummy! It was simple to make, low in fat (just use a non-stick pan and go easy on the oil and butter and really tasty. Served with a salad and some crusty bread and it was delicious!
