    This was the first time my husband ate zucchini with gusto, and a smile. With just the two of us eating I could make it in one batch. A very good side dish.

    Not bad. It's a great side to throw together quickly. I give it five stars because it is so healthy, too. If you cut back the parmesan to 1/4 cup than this is a really, really low calorie option. Great for anyone watching their waistlines!

    Try also her zucchini pancakes - I love those.

    I couldn't believe a recipe that is this simple could taste as great as it does! I've been using this recipe for more than 2 years and I still love it. It is so versatile and goes with almost every type of meal. Try it - you'll love it.
