    Not bad. It's a great side to throw together quickly. I give it five stars because it is so healthy, too. If you cut back the parmesan to 1/4 cup than this is a really, really low calorie option. Great for anyone watching their waistlines!

    Try also her zucchini pancakes - I love those.

    I couldn't believe a recipe that is this simple could taste as great as it does! I've been using this recipe for more than 2 years and I still love it. It is so versatile and goes with almost every type of meal. Try it - you'll love it.

    a non-recipe recipe. simple, light, tasty. Added garlic w/the onions and even left out the cheese at end.

    For a main meal for 2, I cut back to 2 Zucchini and 1/2 an onion. Added suggested Garlic, 2 sliced cloves after the onions. When all was done I mixed in just a little warmed marinara to deglaze the pan and put it all over polenta. Very hearty and delicious.
    FYI - I tried yellow squash but it did not brown as well as the Zucchini.
