    OK so my husband is from Panama, I am American, and am constantly on the search for authentic spanish recipes. I made this one night and my husband likes it better than the dish in Panama. I then made it for his side of the family, who strongly agree. I had 12 Panamaiens asking me (an American for a spanish recipe! Very proud of myself! Those of you who are rating this dish with one star are only doing so because you did not follow directions! It is not Ingrids fault if you overcooked the chicken, put too much ketchup, or forgot to defrost your veggies! Oh- and a note on those of you in Miami who say there is no ketchup on arroz con pollo- Get with it! I have lived on southbeach for three years and have always been served ketchup with the dish!

    I don't personally like Ingrid's recipes but I thought I'd give this one a try. I have to say it was quick, easy and terrific. Good job Ingrid.

    This recipe was tastier than the normal Arroz con pollo that we make here, and what a great way to add in those veggies that the kids hate to eat in the first place. They don't even know they are in there because they don't taste them. I did use the carrots and the peas, but no green beans. I also added the carrots and peas after the water had evaporated, before I put the cover on, and they came out perfect when the rice was done. I also omitted the ketchup and used tomatoe paste in its place. Other than that, did as recipe overall stated (although missing the browning the chicken first and the whole family LOVED it!

    I suggest you overlook the bad ratings as people who don't know how to cook or just didn't do it right, period, and try it for yourself. Your taste buds will be pleasantly surprised!

    It sounds like a 4 star anyway! I want to make this tonight. I found the annotte seeds on the internet so I am good there but what is safrito?? I see it mentioned in the reviews but it is not in the recipe. I tried to find a video of this episonde on the food network but no luck!

    At first I was going to give this a bad review. It took almost 8 cups of water to cook the rice. As it is the pan was not the best choice for it. Second the ketchup taste is pretty strong. This recipe serves about 10 people with big appetites. This recipe is overkill for a family of four. I ate it today as leftovers (I will be eating a lot of leftovers, but the flavor have mellowed out a little. I was still a little disappointed. It looked amazing on the show. Not in real life. Chicken and rice is one of my favorites, I don't like it sweet.

    I have tried dozens of recipes from the food network. This is in my TOP 3!!!!
    Deliciously cooked chicken + fabulous rice = incredible meal!!! Wife, kids and mom loved it. I had helpings twice.
