If you are looking for a healthy meal that doesn't skimp on flavor, this is for you. It has all your protein, good carbs, veggies, fruit....all in one dish. It is so tasty! I substituted the long grain rice for long grain brown rice for an even healthier flair. You will not be disappointed by this dish and neither will your scale!!!!

I made this tonight and it was wonderful. Even my daughter who doesn't like fish ate a filet!! we all enjoyed the rice. I used brown rice instead of white and it didn't make a difference as far taste. Can't wait to make this again.

It was a great recipe! I really enjoyed the different way to fix Tilapia. The pineapple, black bean rice was awesome. My husband loved it as well. It might have been a little too much cilantro for me.

Emeril has a similar citrus marinade that is absolute garbage compared to this one. He pairs his with a coconut rice and pineapple salsa that was very good. However, Emeril's marinade lost it's citrus flavor completely. All I tasted was the fish. This marinade however was AWESOME!! You could taste the orange and lime juice together and it was like a symphony in your mouth. I ended up eating nothing but fish and threw the sides away it was so good. Highly highly recommend this recipe.
