I ended up cooking the tilapia and rice seperately because I thought the rice and beans was so delicious that someone who might not like fish wouldn't try the dish. So, rice and beans alone was amazing, I made a tomatillo sauce and served it on the side, really sparked the dish. The tilapia I marinated all day, and it was so yummy, flaky, and flavorful it was the first thing on the buffet gone. I finished it on the grill, but just to make it look a little bit browned, not necessary. I highly recommend.

This is a great recipe, we are having again tonight. I think all the recipes especially the HEALTHY EATING postings should have the nutritional info listed.

Totally Fantastic - I made this for our friends and brought it to their house for dinner. What a hit! Everything about this dish was perfect. The only thing I did different was used a rice with a bit more texture so I used wild and long grain - it was fabulous! The flavor was spot on! This is an awesome recipe!

Epic Fail! The citrus from the limes, sugar and pineapple was overpowering. I've had deserts less sweet than this dish. The entire family threw their plate in the trash.
If your set on making this recipe, omit the limes on top of the fish and marinate the fish in more garlic and cilantro for at least 45 minutes.

We love this recipe! Since we are frequent travelers to Costa Rica we were looking for a recipe that was closet to our dishes during our travels. Of course nothing is quite like the meals when we are actually IN Costa Rica and made by our favorite Tico's.. but this is very close to home. If you have a bottle of Costa Rican Lozano.... it makes this meal even more tasty!! Also you need the limes that are like a cross between an orange to make this recipe spot on. I wish we could get those in the states... Sooo tasty!! Regardless this is a meal we make fairly often! Making it again tonight!

Amazing recipe, definitely a hit with the family. I substituted dill for cilantro since my husband hates cilantro. I also used brown rice instead. I wish I would have used some of the other suggestions to season the fish since it was sort of bland, however, everyone went back for seconds so it was great!

This was excellent! I didn't have enough salsa so added a can of Rotel tomatoes as a sub. Also had read a similar recipe that used red bell peppers in the dish so added those and about 2/3 of a fresh zuchinni. Also followed a previous suggestion and sprinkled the fish with Jerk seasoning. Used brown rice and fresh pineapple (they're in season now. This was an awesome meal!
