    I am so NOT a fish lover and tried it with Tilapia and still no go on liking fish, but my son loved it. The rice mixture is wonderful, even though I didn't have any lime or lime juice on hand. I think this would pair nicely with chicken breasts.

    I used instant brown rice with the chicken broth and replaced the fresh pineapple with crushed, since that is all I had on hand. Great flavors for the rice portion. I did marinate the fish for several hours, but to try to convert a fish hater to a fish lover, just did not work for me.

    Very tasty dish and easy to prepare. I used a mixture of a fresh salsa (diced veggies and a homemade salsa that had more of the consistancy of store bought salsa and it worked out well. Recipe is going in the 3 ring binder!

    Delicious! I marinated the fish for over an hour and substituted frozen corn (just mixed it into the rice at the end of its cooking for the pineapple. Also used brown rice instead of white to make it even healthier-just remember that brown rice takes longer to cook than the recipe says. This recipe is great but I wouldn't recommend it for a quick weeknight meal- there are a lot of steps.

    This rice recipe was terrible. I'm sorry to say that. I tried doctoring it up but it wasn't worth the time.

    Good Lord!!! I, being from Florida and running a restaurant for years, thoroughly enjoyed this recipe. The simplistic, almost rustic, authentic flare, not only compliments the star of the dish, but the components "raise their hands" and demand to be noticed and appreciated as well. Hats off to you Ingrid.

    Wow - what a zing. couldn't add the pinapple cuz my wife can't stand fruit in the dinner. added Lizano salsa about a tablespoon. Just incredible. Used a rockfish (striped bass fillet from a 20lb fish I caught this morning.

    Great recipe! I used catfish instead of tilapia since that is what I had, and oranges instead of pineapple for the same reason. Turned out so good: tender fish with just enough zing!

    This was an awesome recipe! I made this as a special dinner for Valentines day and was it a hit! I highly recommend it. Flavors were varied but complimented eaach other perfectly. Can't wait to find other recipes made by you. Thank you!
