    I made the recipe tonight. Instead of cilantro, I used fresh parsley. I omitted the sugar, used 3 garlic cloves and reduced the pineapple to 1 1/4 cups. My family really enjoyed it, and the tilapia was perfect, very mild, not too fishy. I will definetely make this again, and try it with chicken, only I'll marinate that longer.

    This dish was so easy to make and absolutely delicious!!! I can't wait to make it for company. The colors are beautiful and the aromas out of this world. This was the first Ingrid Hoffman recipe I tried, I will definitely be trying more.

    Me and my family loved it! The way the flavors all blended together and how they complimented one another this recipe will be one of our household favorites..my hubby said we should have this a few times a month and it is very healthy!

    I was skeptical at first about the pineapples, but boy was i wrong it added such a new dimension to the flavor of this dish. It was super easy...my family couldnt get enough of it. I had no left overs. this is def one that I would make again with no variations! THe tilapia was moist, all the flavors had fromt he marinade seep into the entrie dish while baking and so when you actually have this dish, all you really get is a major POWERHOUSE of flavor. Thank you Ingrig, this one is a keeper.

    Since I like tilapia because of it's mild flavor, I was unhappy with the strong fish flavor. The rice, beans and salsa tasted okay though.
    I definitely won't make this again.

    I made this for my mother & aunt I used regulad OJ instead of fresh never the less, they ate it up so fast! There was none left! I will be making this a lot more in the future! P.S. to the person who asked this is to be baked uncovered.

    Easy and quick recipe. Following are my changes/additons.

    Grilled fresh pineapple before dicing
    Added lime zest and minced jalapeno to marinate and rice
    Used brown rice
    Omitted sugar

    My fresh pineapple wasn't quite ripe enough to cut and of course, I didn't have any canned available. I also didn't have any cilantro (don't like it much anyway. This was WONDERFUL!
    If you cook the rice in the chicken broth as in the recipe, it isn't watery at all. The recipe says 20 minutes; it means it. Don't forget to rinse and drain the black beans too. This will also eliminate the possibility of it being watery.
    Fresh medium spicy salsa from Costco (not peach-mango was perfect, although my husband added red pepper flakes to his serving (he likes spicy. I am making this again this weekend to deliver to son-in-law recovering from surgery. This will be a great family meal for them and all they have to do is heat it up for 30 minutes.
    Very highly recommend. Handing out recipe to several friends, even one who is a vegetarian and will use tofu instead of fish.

    Wow! My family absolutely loved this dish. The combinations in the rice was genius...The fish was good but, definitely needed a bit more salt and seasoning. I will definitely make this dish again and again; maybe trying a different type of meat.
