    I couldn't find guava paste so used concentrated guava juice, it was a bit sweet but delicioso none the less. I have since found where to find the guava paste. The guava salmon with a bite of the mango salsa was a wonderful taste of flavors. This is one of my favorite recipes and I will make it again and again.

    I made both recipes for dinner last Saturday. Everyone absolutely loved the dish! I had trouble getting all of the ingredients at the supermarket. I couldn't find star anise the closest thing was anise seed. I couldn't find guava paste so I used guava jelly. No serrano chiles at King Kullen so I used a jalapeno pepper instead.

    I thought the guava's sweetness overpowered all the other seasonings as well as the fish. I think it needed to be balanced out with something else. I am not sure what, but maybe more rum or a different and not so sweet onion?.

    Maybe if NH carried guava the barbeque sauce would have came out better, but I used guava jelly - closest I could find. I wasn't a fan of the salman - although the fish was good, I didn't really like the smell of the BBQ sauce. The salsa was wonderful and I may keep that part of this recipe to have with fish taco's or just plain with tortilla chips.

    I made this with a few minor tweak and loved it! One of the best things about this recipe is that it uses fresh ingredients. A pervious reviewer recommended salting the salmon, so I put the salmon in a salt, pepper and garlic brine while I made the sauce. I also added a little chipotle to the sauce. The only other change was I prefer to oven roasted my garlic with salt pepper and olive oil.

    When I made the guava barbecue sauce, I was really afraid that it was going to be too sweet for the salmon. However, it turned out to be absolutely delicious. I loved how it carmelized on the salmon. My husband and I both ended up salting the fish, so I think next time I'm going to go ahead and add a little salt to the sauce. I also think this sauce would be terrific with some fresh jalapenos or serranos added to it, so I'm going to try it that way next time.
