    I absolutely love this recipe!!! I make it using ground pork. I like it so much because it is so versatile. You can use ground turkey, chicken, pork or beef. You can use pretty much any cheese you have on hand. I have even made it without cheese and it is just as tasty. I have also made it use black beans instead of pinto beans and added a can of corn. To add more flavor to the cornbread? mix in a small can of green chilies or for more spice extra chipotles and adobo sauce. I also add 1 Tbsp of Sazon Completa (Complete Seasoning by Badia.

    This recipe was delicious. I put in 4 chipotle & about 4 teaspoons of the sauce, it was a bit spicy but I love spicy food so it was perfect. I also made all of it yesterday afternoon except for the cornbread topping when dinner time came around I mixed that up put it on top & threw it in the oven...so simple...& so incredibly good!!!

    This smelled so good when it was cooking and I didn't think it would taste nearly as good as it smelled, but I was wrong. This is amazing. My husband grew up in the south part of Texas and is very picky about his Mexican food. This was not disappointing to anyone. I did add a bit of salt and pepper to the turkey mixture, and used Jalapeno corn bread mixture for the top. (Don't like mine sweet. This will be on a regular rotation, for sure.

    This recipe is on point. I made it last night for dinner and my b-friend tore it up. I could not find chipotle peppers so I used chipotle bouillon cubes and they worked just fine. I will be making this again!

    This is a great recipe to customize. I substituted frozen corn for the green peppers and the texture worked out great. I also added more salt and seasoning (fajita seasoning worked great to give it more of a punch. Overall a great great recipe!

    my husband and I really loved this recipe. so easy too! i put a bit more chipotle than called for, but we are really big fans of the chipotle flavor and like things spicy. also, I used ground chicken because that's what I had. I highly recommend trying this recipe.

    I have made this several times, each time just as good as before. I had to care for 2 of the pickiest 3 y.o. know to man. One only likes chicken nuggets and fries the other canned pasta. All I had was this pie cooked and they came over both hungry. I gave them small pieces and looked over and both the plates were cleaned. One was actually licking the plate. LOL I served it with a spinach salad. I enjoyed it so did the kids. I did add 1 package of low sodium taco meat seasoning to add some punch. It was soooo yummy now the kids ask for it and so do their parents. It's a quick, easy, wallet friendly meal. It's in heavy rotation at my house everyone ask for it. I love the boxed cornbread topping. It gives the right balance of sweet and savory which is a wonderful combo IMO. Keep it up Ingrid Hoffmann

    So, it may not be the most authentic Mexican or Latin dish, but I still thought it was delicious. This is 'The Melting Pot' after all... It's a great recipe to involve the kids with as well, which is extra credit in my book. Thanks Ingrid!

    We have made this recipe more than a dozen times now, because it is so well received by friends and family. The sweet corn muffin topping melds perfectly with the slightly spicy meat filling. We have tried it with several modifications, too, including black beans and a mix of beans but the original is always stellar. I recently introduced this to co-workers and every single person asked for seconds and the recipe. The latter request could easily be met, thanks to the great Food Network site; unfortunately, the former request could not be met, as there were no leftovers for seconds!

    The only caveat to those who do not like spicy food, this dish has some bite, so it is not for the faint of heart. The recipe is easy to make and if the dish actually makes it to the next day, the leftovers reheat well.
