Good salad with very refreshing flavors. Used walnut oil instead of olive oil for a nuttier flavor (goes great with beets. Left out the olives because they don't go so well with walnut oil.

Made a few changes because I didn't have the ones the recipe called for. Scallions instead of Spanish onion, Cilantro instead of mint. Maybe it's not the original but came up good any ways! Love it.

GREAT flavors!! I used 4 instead of 6 large beets, Kalamata olives and a sweet yellow onion; super easy to do and really delicious. I will be making this often.

I used two large beets and three oranges cuz that's what I had... A red onion instead of yellow. It made three servings. Very delicious combination! Fresh mint is a MUST!

I saw Ingrid's show yesterday morning and had to make this recipe. I had bought some Trader Joe prepared beets and had all of the other items. Quick and easy to put together. It was one of the best recipes I have gotten from Food Network. I will be making this salad a lot for the rest of the summer.

This is a rough estimate, as no exact weights or dimensions are given for the foods. I looked up the data on each item, and divided the total by 4 servings. The only way to do this, is to get yourself a recipe software program, and feed the recipe into the database - and let them calculate. The other option is to find an online site with extension data.
The oil that was drizzled, I figured on the low side (about 1/2 Tbl on each serving.
Cal = 120; Fat = 8; Fiber = 6 I can't find my old WW slide, so you'll have to calculate the points yourself.
I make a similar salad. It includes Orange (peeled slices, red onion slices, and Boston Bibb Lettuce 'cups' (leaves, a drizzle of EV Olive Oil, salt and pepper. We love it - especially, when we marinate shrimp or fish in Lime Juice, S&P for 15 minutes before grilling.

I'd like to have the nutrition information for this dish. With the calorie, fat, and fiber numbers, I can calculate the number of Weight Watchers point are in a serving and incorporate the salad into my food plan.
