    I couldn't find the pineapple flavored Jello so I just replaced it with another lime flavored Jello (LARGE SIZE. We made two batches last night. First batch I used 1cup of boiling water with the two lime Jello and poured the boiling water in the mixing bowl with the Jello. Jello mix didn't mix well. Second batch we used 3cups of boiling water with the two lime packages and mixed it in the pot with the boiling water and they came out better. IMPORTANT: I recommend you watch the video. The directions are not what the video show and we followed what she did on the video. No where on the video does she use the extra sugar and we didn't use any sugar. They are sweet enough with the Jello mix. Can't wait to see how our guest will also like them when they come over tomorrow night for my 30th bday.

    Fresh pineapple contains bromelain, which breaks down proteins, such as those in gelatin. Use canned pineapple in gelatin.

    Regarding the grittiness, usually one pack of Jell-O requires one cup cold water and one cup boiling water, with the cold water being replaced with the alcohol or other juices you want to use. It looks like, with two boxes of Jell-O, this recipe falls about 3/4 cup of extra liquid short. What's wrong with some more rum?

    I have not tried this yet. The recipe dose not tell you what size box of jello to use. I'm going to use the large box. I'll let you know how they turn out.

    We make gellatin shots for all kinds of celebrations, but this is the first recipe that simply didn't come out right. The liquid-to-gellatin ratio was off and the result was a gritty gel that settled to the bottom and never quite set on top. The taste was too sharp and in no way resembled a mojito.

    The recipe did not call for fresh pineapple to be added to it but the photograph showed pineapple chunks in it. We found out too late that pineapple messes up jello. We wasted a whole bottle of Bacardi Limon on this recipe. $$. We were very disappointed.

    WOW! YUMMY!! Having a Parrothead/softball Celebration this Friday Night, and I WILL HAVE several dozen of these yummies waiting for the players and guest! I did not use light rum, when I "test" drove this recipe, I used several different types of rum, and the folks who "sampled" thought that the dark rum worked best... but again it's up to the folks that you have enjoying these "jello shots". Parrotheads have ALWAYS enjoyed jello shots... I am so happy to have this to add to my collection!!! Yummie!!
