Really great beans. Everyone asked who made them! I was very proud to say ME!

I liked the recipe for Ingrid Hoffmann's, "Ranchero Beans Recipe", I made the recipe just as written. I found that using a whole Jalepeno and a small can of chopped tomatoes did not meet my idea of the 'hot' deal I was looking for. I have chosen to drop the Jalapeno all together. I will use 2 cans of "Original Ro-Tel Tomatoes and Green Chilis". This will give the beans, plenty of chopped, spicy tomatoes without using too much Jalapeno with seeds! Enjoy!!! :-

These were very good! I would of liked mine with a bit more liquid so next time I think I will add some broth to it. I would like to even try these with dry beans and simmer in the crockpot all day. They made a nice side to go with my carnitas. I too sauted the onion and jalapeno before adding to the pot.

I work for a dinning center, and was haveing taco bar and had no refried beans but had pinto beans. So i did this recipe but alot more of it. The next day everyone said the beans on the taco bar were so good. So I printed off the recipe for some that asked how I made them. What a great hit!!!! Thanks

I saw this show this morning at 4:30 am when I couldn't sleep. Thought I'd give them a try. Threw them together after I got home from the market and before lunch. They were easy and absolutely delisioso....a keeper! thanks!

I made this for dinner with fajita seasoned chicken breasts. It was so good! I didn't put the by leaves in it and it was still very good. I also sauted the onions, peppers, added garlic with the bacon and then drained the fat. After that, I added canned tomatoes, seasonings and beans and just warmed it through. My DH is still commenting on how much he loved it days later. Thank you for the recipe!!

This is a really good & easy Ranch Bean recipe. I think there's an error in the size Pinto Bean can to use. I tried a 15oz can and it got lost in the sauce. It worked better with a second can of beans so I would suggest you use a 28 oz can. I too softened the onion in the bacon fat before I added the other ingredients. I used 1/2 a large onion and that was enough. I also used a can of Stewed Mexican Style Tomatoes and gave them a large chop instead of the canned tomatoes.
