Excellent recipe. It really captures all the flavors I associate with Latin cuisine. For the Aji I use 2 habaneros, seeds and all. Aji is meant to be firey; this Aji is weakened for those who can't take the heat.
If you're complaining that the recipe is too greasy, then you don't know how to properly prepare stocks, soups or stews. Part of any stock/stew/soup recipe is totally degreasing it. You're also missing out if you don't prepare your own stock and degreasing that goes a long way towards a finely finished dish. Stews need to rest; overnight preferably. That affords a second opportunity to remove impurities from the final dish since the fat rises and solidifies.
If you find your recipes turning out fatty/greasy you really need to properly learn how to de-fat and de-grease. Fat is a vehicle for flavor.
It serves a purpose, once rendered for that purpose you then need to remove it. It is that simple and is a basic technique that no cook should be without.

I am of Taino/Spanish/African descent and a finicky eater at that -- having only tried sancocho prepared by my grandmother which was the best I have ever had. However, my grandmother is no longer around and when I began craving for sancocho I knew I needed to try and perform this task solo. After a Google search generated several links...I was ever so grateful to have found the recipe which prompted me here. This recipe is both easy to make and delicious. A wonderful menu for a cold or rainy day. I love my sancocho served with avocado, garnished rice [arroz con ajo], and aji. I noticed my grandmother use to add 'jugo de naranja agria' [citron juice] which heightens the flavor of the broth. My Argentinian/Peruvian husband loved it! Ty Ingrid for this fantastic recipe. We're satiated.

As a Puerto Rican woman I have only had my mother's sancocho. This was my first time trying by myself and we absolutely loved it. We are not big fans of "hot" food, so I didn't use the aji. The sauce was thick and tasty. I love all your recipes, and have tried a number of them.

This is truly the best sancocho recipe after my mother's and grandmother. By the way interesting to see that a supposedly Colombian (Tania does not know that Columbia is the district between VA and MD and the country is called Colombia, and their natives are Colombians not Columbians.

Im mexican american married to a peruvian. My mom and me made this dish and everyone loved it.We kinnda seen it as a little like caldo de res with that latin flare. I really wish people wouldnt be so harsh and say they hated it so much they threw it away, por favor were latino and you know mami dont throw nothing away no matter how bad. GREAT JOB INGRID!!!!

I am so glad to see Sancocho on TV. It feels good to know that the yummy sancocho we share in our family every sunday is broadcasted and introduced to different people. Being Dominican an Mexican I love people to know what we eat and how different Latino America is. I hope to see Habichuela Dulce soon :

I HAD TO WRITE A REVIEW REGARDING THIS RECIPE! ABSOLUTELY DELICIOUS! I AM ITALIAN AND MY HUSBAND IS COLOMBIAN AND I WANTED TO SURPRISE HIM AND MAKE THIS DISH THAT HE HASN'T HAD SINCE HIS MOTHER USED TO MAKE FOR HIM AS A CHILD. WHEN HE TASTED THIS RECIPE HE WAS AMAZED THAT I MADE IT AND ACTUALLY SAID IT WAS BETTER THAN HIS MOTHER'S. I ALSO INVITED A FEW EQUADORIAN AND PUERTO RICAN FRIENDS OVER TO ENJOY AND EVERYONE ABSOLUTELY LOVED IT. AND THE AJI GAVE IT THAT SPICE!! THEY ALL WANT TO ME TO MAKE A WEEKLY SANCOCHO NIGHT...LOL..I DONT KNOW ABOUT ALL THAT SINCE IT IS TIME COMSUMING BUT I WILL BE ADDING THIS TO MY FAMILY TRADITIONS!
