    Delish!! I was only making 2 fillets so I quartered the recipe. I am eating light so I only used 1 tbls of the olive oil for the 1/4 recipe. It was so flavorful and so moist using the parchment. I have been using parchment for tilapia for a while and needed a good recipe. I just found my go to!

    I didn't use the pockets and it turned out just fine. I used less oil and the fish turned out moist and delicious anyway.

    The "mojo" was not very flavorful...I can't eat lemongrass, so I added the juice of one lemon after tasting the sauce, which was not a good flavor. I added about a Tbsp of sugar and 1-1/2 tbs gourmet rice vinegar. The fish tasted good enough (with a little salt sprinkled on it after it was served, but the dish could have been eaten with a spoon the sauce was so runny. I need more protein in my diet, so I 'm trying a lot of tilapia recipes, but I won't make this one again. I'm sure it's just personal taste.

    The recipe claims to be easy, but it must not be cuz it's been a while and I'm still grossed out. I must have done something really wrong. Way too oily!

    I tried this one, just getting a litle less jalapeno. It's an easy and eye appealing dish to serve to friends. Looks different when serve with the parchment paper.

    It took a while to get the ingrediants in Richmond VA. It was cheaper to go to an Asian market for the herbs. The Mojo was awesome. Just wished it had more zip. I would suggest adding more jalepenos. I had so much Mojo left over it hurt to throw it out. Wish I could have used it. The final presentation was awesome. I had to cook my fish longer than the suggested time. Use your judgement. Definitely one to use if you want to show off to your family and/or friends.
