- 4 tomatoes, sliced
- 1 onion, sliced
- 1 green bell peppers, sliced
- 1 red bell pepper, sliced
- Bunch parsley, leaves chopped
- 1/2 cup extra virgin olive oil
- 1 tablespoon wine vinegar
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
Combine tomatoes, onion, bell peppers, and parsley in large salad bowl. Combine oil, vinegar, salt, and pepper in small bowl. Whisk until blended. Pour vinaigrette into salad bowl and toss.
