    I made a variation of this dressing with what I had on hand. I'm certain the result was close to the recipe intent and it was fabulous! Everyone should try this at least once!

    My wife made the dressing as she followed Mariel from FoodNetwork TV. Our girls, my wife and I loved it. Excellent ingredients for all of us to eat it with salad. This is a must for health or diet food.

    I have made this recipe several times. We especially enjoy using it as a marinade over chicken, setting some dressing aside for later as a topping for the cooked chicken. It makes the moistest chicken ever! I think 1 cup of mustard is the right amount if you use the right mustard. Having made it several times, I lean towards using a sweeter mustard (like a honey mustard so the mustard flavor is not so overwhelming. I also substitute sugar for stevia when necessary. I highly recommend this recipe. It's a hit at our house!

    I agree with the other reviewers that this is a great basic recipe and an even better idea for a salad dressing. It's pretty much a salad itself!

    I also agree with those who said 1 cup of mustard is too much. I followed the recipe and the mustard overwhelmed the dressing. 1/4 cup should be plenty.

    My kids like this over a salad of cherry tomato and cucumber (among other thingsand for the grownups a little garlic and/or red onion add some punch. Now I'm inspired to make some spinach "pesto" to put over the kids' pasta!

    I loved the earthy taste of this dressing. I found that you can substitute diferent herbs for the basil and it taste wonderful also. I am very pleased with this dressing and will be using it often. I will probably do a marinade with it on some chicken.

    Great idea for the recipe!!! I made this and it tasted good and was really fast... I added a bit more basil, used dijon mustard because I din't have any yellow mustard(next time I think I'll use less, added garlic, pepper and also added a couple of jarred roasted red pepper. The red pepper really added some flavor. The dressing was good without it but it was really good with it!!!

    I just watched the show and noted Mariel added apple cider vinegar [about 2 tbsp] and also liquid from the Kalamatas [about 2 tbsp]. She also did not add the entire pkg [o.35 oz] of stevia... I buy the same brand and am familiar with this item...try using about 1/4 of the pkg and increase it if you like it sweeter. Stevia is very sweet.

    I made the recipe using less mustard [1/4 cup... one cup would be way too much IMHO] and less spinach... about 3 cups and more basil [about 1 cup].

    I think you will like the results! :

    the recipe worked-it is fast and easy but tastes excellent-the olives give a great depth of flavor. Mariel's Amazing is very heal;thy and it really gave me a boost on my diet. My fridge will never be without that "green" stuff.
