I thought the flavors were great together. Next time i will make pineapple chunks smaller. I put them on a sheet pan in oven but they came out soggy on the bottom and messy so next time i will try them on cast iron griddle. But all in all def worth the mess.

I don't miss your program on Saturday, my husband is a mexican cook and he forgot to mention a lot of the traditions you've shared. Your recepies are really authentic and delicious. Family is also everything to us. Congratulations on your wonderful program.

This was great... the mango puree alone was worth the recipe...

Very tasty and easy to make... my only suggestion would be that it could easily stand more cheese... and the possible variations on this recipe are endless...

I really love this recipe, shrimp or chicken is great. I make this for family gatherings and there are never any leftovers! This will definately be one of my classics for time to come. (I like pineapple, but I used less than reccomended

My sister and I are always searching for new and exciting dishes for our family Sunday dinner...I stumbled upon this one and everyone thought is was great. We all like spicy so we will probably add some fresh jalopeno to the puree next time...oh...only downside, even with us working together, it took longer than 15 minutes..but it was WELL WORTH ever minute!

I made this for dinner tonight. It was super easy and delicious. My husband said he would order this in a restaurant. I will definitely make this again. I didn't make the lime sour cream, and I substituted a few ingredients. Can't wait to make it again!

I used chicken instead of shrimp. recipe was super yummy. I used soft corn tortillas and they didn't harden as desired. Next time I'll toss them on the grill to get some crunchiness.

I served this to my husband and 2 young children. We couldn't get enough! The shrimp combined with the rest of the quesadilla ingredients tasted like perfection! This is definitely going to become a regular dinner at our house.
