Ingredients
  • 2 cups cooked quinoa
  • 1/2 cup chopped marinated artichoke hearts
  • 1/2 cup chopped cucumber
  • 1/2 cup cubed mozzarella or chopped cheese sticks
  • 1/2 cup chopped tomato
  • 1/4 cup olive oil
  • 1/4 cup chopped roasted red peppers
  • 1/4 cup chopped salami
  • 1/4 cup red wine vinegar
  • 2 to 3 tablespoons chopped shallot
  • 1 teaspoon granulated garlic
  • Chopped fresh parsley, for serving
  • Salt and ground black pepper
Directions
  • Mix together the quinoa, artichokes, cucumber, mozzarella, tomato, oil, red peppers, salami, vinegar, shallot, garlic, and some parsley, salt and pepper in a large bowl. Serve at room temperature or chilled.
