Ingredients

  • 1 teaspoon Dijon mustard
  • 1 tablespoons balsamic or red wine vinegar
  • 3 tablespoons olive oil
  • 3 tablespoons chopped fresh basil
  • Salt and pepper
  • 1 cup chopped cooked chicken
  • 2 plum tomatoes, seeded and chopped
  • 4 slices bacon, cooked and drained
  • 1 cup of washed arugula leaves, coarsely chopped
  • 4 thick slices Italian bread, Tuscan rounds

Directions

In a large bowl whisk together mustard and vinegar. Whisk in the olive oil. Stir in the basil and season with salt and pepper. Stir in chopped chicken, tomatoes, bacon and arugula and mix to combine. Assemble chicken salad on thick slices of Tuscan or Italian bread

    I tried this salad for dinner tonight and it was so so so awesome, i used more chicken and more bacon than the recommended and i didnt know if i was supposed to cut up the bacon ...i did and it was the way to go. I drizzled a little dressing on the bread before putting the salad on top--btw you HAVE to have the bread it makes the salad a little more filling and the doughiness of the bread is just amazing. I used only one slice per plate cause two is just too much. oh, and i always make twice the recommended salad dressing and spoon it on cause i would always rather have more than not enough. i will definitely save this one in my recipe box and i look forward to having this for left overs tomorrow!!! --um hubby was VERY happy with dinner tonight! If you are looking for a salad to make and arent sure....YOU HAVE TO try this one!!!!

    The flavors in this are great. I've made it several times and everyone wants the recipe. It's filling but light ... perfect for summer nights when the basil and tomatoes are fresh from the garden !

    Actually, I made this about 6 months ago. I remember it took me an hour to make b/c I actually had to cook the chicken first. I did really enjoy this. It had great flavor.
