for this particular application i like more grapefruit flavor so i do not boil the flavor out of it. i go right to the sugar step without the successive boils in fresh water. if there are kids around though, you probably want the additional boils to keep the tartness from being overpowering. matter of taste...
leaving the finished grapefruit peel to dry to a leather (no additional sugar or chocolate, approx. 4 days allows you to use the finished product for baking.
cut the strips into 1/2" squares and infuse them with a little orange oil (i use boyajian, 2 tsp/cup, cover and shake daily for 4 days at room temp. you get a lot of citrus bang in each piece.
biscotti. mix equal portions pistachios and grapefruit peel. ...really good.

I think the taste for candied citrus peels is an acquired one, especially grapefruit. As a child I hated them but now that I have made them I am in love. The candied grapefruit peels are an excellent alternative to candy and a joy to make. Highly recommend, though the taste is not for everyone. I made a syrup from the leftover fruit, glazed some muffins with it, iced them with cream cheese icing and finished them off with chopped pieces of the candied peel --- yum!
