    Question? What was the name of the tool Jacques used to straight out the chocolate (it was metal and adjustable.

    What a fun thing to know. Jaques obviously shared some little known facts about working with chocolate. I was very impressed with his courtesy and professionalism. The recipes is easily adapted to various holidays by a change of color. I higly recommend viewing the process on video before following the written instruction, because some thing are simply easier to understand that way.
