    I actually stumbbled across this restaurant while I was in New Orleans. I even ordered the sampler plate that included this jambalaya and I have to say it was fantastic. I didn't notice Guy's signed poster on the wall until the second time we went to the restaurant in our 5 day stay. That should let you all know how great the food was :

    Haven't made this yet, but he roasted the "shredded chicken" by skinning it, topping w/fresh chopped basil, garlic and rosemary, 450* for 45 min., cool, then shred!

    This was an awesome dish. I saw it on Diner, Drive-ins and Dives and it just looked soooo good. This was the first time I ever made jambalaya and my entire family loved it.
