    I brined the chicken overmight. I also put thyme, Rosemary & Lemon slices under the skin to give it more flavor!!!!!!

    Excellent recipe. This is one of the finest roast chicken dinners I've ever made. It made me think of a fabulous french bistro item. I add sage compound butter under the loosened skin along with some turkey rub. I also rubbed the skin with a little olive oil before placing the fresh chopped rosemary, thyme and Tone's Rosemary garlic seasoning on the skin. Searing the bird left the skin crispy, flavorful and delicious. The veggies, cooking together with the chicken were marvelous. I added chunks from a small sweet potatoes and a few fresh garlic cloves. Absolutely delicious one pan dish! I'm going to add a little flour to the gravy as well as the wine this time. Thanks you so much for sharing, Jamie!

    PERFECT.. so easy to make and the amount of time to cook was spot on! Dinner was superb and clearly will make this again. The chicken was so perfectly cooked and the flavor was incredible. Don't over do the salt.

    Incredible, and easy! I didn't have any rosemary by itself but I had italian seasoning that had rosemary in it, so I used that and herbs de provence, and the fennel. I think next time I would skip the fennel, it just didn't do much for me flavor wise. Next time I think I'd use maybe some basil or thyme or something. Next time I'll add some whole cloves of garlic, and maybe some parsnips or sweet potatoes. I will also try to increase the amount of veggies which might be a little difficult to get them all to fit in the pan. I did use a cast iron pan like Jamie did on his show. This is one of the best recipes I have tried in awhile. Can't wait to make it again!

    This chicken was delicious! Everyone loved it! It was very juicy and tender, and the fennel seed and rosemary gave it great flavor. It is definitely worth making again.

    FAB-U-LOUS!! This chicken is sooo juicy and tender. I made it for my family and they all loved it. Our only problem was not enough of it so next time I will buy a bigger chicken. Thanks, Jamie, love your show.

    This recipe is WONDERFUL!It has won its way to being on our regular weekly menu. I love just about anything cooked in an iron skillet, chicken, apple pie, etc...Loved the idea of using sweet potatoes. I will try that next time.

    This was WONDERFUL. The chicken is really moist and flavorful and veggies are perfect. I added a few garlic cloves and some chunks of sweet potatoes and it was PERFECT. Best part is that it's super easy. Thanks Jamie!!! Love your show!!
