I love this recipe! It's great because you can make a lot of substutions to suit your specific taste. For example, I used a sweet onion instead of the red and green onions, I also added cilantro. The dressing was easy and very simple. My kids even loved it and they are picking eaters.

Oh My Goodness!!!!! Jamie, this salad is great. I had the gastric bypass surgery 2 years ago, and I have to be careful with what I eat. My stomach had no problem digesting it and it tasted so good. Very easy to make also.

We really enjoyed this salad. We did a couple of things differently. We had quinuoa on hand so we used that instead of the brown rice. We loved it. We grilled the corn rather than the iron skillet and it came out nicely as well. I think I would use a bit less onion and choose one or the other depending on what I had on hand. I would also make it a bit earlier in the day or ahead enough that it would be well chilled before service.
It was a treat and would be good with beef or chicken. Its good to eat all by itself with some good tortilla chips as a dip as well.
    YUM!

This recipe has become a staple. If we are going to a potluck, then we can make it a day ahead. I also make extra dressing because the rice tends to absorb the liquid and you can add more dressing later. We also cut up and add the tomatoes just before serving. I have also found that I like to char the corn directly over the flame because it seems to be a little quicker.

Such a light and refershing salad. Everybody, no matter the age, loved this at the family get together. They would all give it a 5+ rating. Can't wait to make a batch to take to work. Know it will be a hit!

This was good. I made it for a family get together and it was tasty and well received. Don't know if I'll make it again, but it was good.

I made it without the rice and spooned it over a fresh halved avocado and it was delicious!!!

Had a bit of difficulty getting the char on the corn, but my family devoured this. It dealt well being outside during the all day pool party. Will make again. Thanks for the recipe!

My whole family loved this salad! I'm not a big fan of raw onions so I used a shallot instead. It was even better the next day - not that we had much of it left over! I think the next time I'm going to add some red or orange pepper. We love Jamie's show because it shows how important eating with your family is to the Deens. And they are all just so cute :
