    This is my first time making gazpacho, and I love the ease and simplicity of this recipe! I made a few changes: I substituted balsamic vinegar for sherry vinegar (what I had on hand, and I added 1/4 cup of cilantro and 1/4 of basil. The only issue I had is that the taste of raw shallot is a bit overwhelming/lingering, so next time I think I'll use 1/2 a shallot or 1/2 a sweet onion. Otherwise, delicious!

    Simple yet delicious, it's the perfect summer recipe. I didn't have any sherry vinegar so I substituted balsamic instead, and it was still sooo good!

    I Loved this recipe!! I did add just a small squeeze of lime boy did it make the soup pop. So quick and easy to make.

    I will admit, I was skeptical about making Gazpacho...But this recipe was absolutely DELICIOUS...I had to improvise with balsamic vinegar and sherry...I worked great...Love these veggie, figure friendly recipes...Keep'um coming, Jamie...

    I didn't plan to make this today, but after finding beautiful, ripe heirloom tomatoes, I immediately thought of this recipe. By far the most simple, easy and DELICIOUS gazpacho recipe I've ever tried.
