Ingredients

  • 1 tablespoon olive oil
  • 1 cup uncooked couscous
  • 2 tablespoons freshly squeezed lemon juice
  • 2 tablespoons extra-virgin olive oil
  • Kosher salt and freshly ground black pepper
  • 1/4 cup chopped fresh parsley
  • 1/4 cup golden raisins
  • 1/3 cup toasted pine nuts

Directions

In a medium saucepan, bring 1 1/2 cups water and olive the oil to a boil. Sir in the couscous. Cover and remove from the heat. Let stand for 3 minutes. Uncover and fluff with a fork.

Whisk together the lemon juice, extra-virgin olive oil and some salt and pepper. Pour the dressing over the couscous and toss with the parsley, raisins, and pine nuts. Serve warm or at room temperature.

    I usually follow a recipe the first time but this time I did make some minor changes and it was so good. I used whole wheat couscous because that's what I had on hand and chicken stock rather than water since I was serving this with Grilled Chicken, Red Onion and Mint Kebobs. I also sauteed a large shallot in 2 Tbls olive oil and then added the couscous and toasted for a couple of minutes. I did use parsley but added a few chopped mint leaves since I was using mint in the main course. I think you could use just about any herb or a combination and it would be good.. This was a very simple and quick side dish.

    OMG....This was delicious! The slight modification I made was to add minced garlic. We loved it and will make it again. I love Jamie's recipes because they are simple. If I see a recipe with more than 8-10 ingredients, I won't even bother with it except at holiday time. Keep up the great work.
