    This dish was amazing. I made it for my family and it was a hit. Even my brother-in-law who doesn't like pasta enjoyed it. I would recommend this dish to anyone who loves a good carbonara.

    I had been given some home grown zucchini, so I decided to give this a shot even though the show and the instructions had me a little worried about the complexity and difficulty involved. I didn't spring for pancetta, fresh flowering thyme, or expensive fresh grated parmesan, but it still turned out great was easier to do than I thought it would be. I used regular thick cut bacon to start, and omitted the extra olive oil because I had more bacon fat than if I had used pancetta. I followed the rest of the recipe until I got to adding the fresh flowering thyme to the zucchini and bacon. I thought I had dried thyme, but I didn't, so I just used some dried Italian Seasoning I had in the spice rack instead. It was fine. I also used a handful of regular, green can, grated parmesan in the sauce. I didn't like the ambiguity of the parmesan measurement in the recipe. I'm 6'2" and have large hands. My neighbor is about 5'6" with small hands. A large handfull is going to vary greatly between us. I estimate that I put in about 3/4 cup of parmesan in the sauce. I also decided to put in a tomato that my wife had cut and roasted on our electric indoor grill right before I added the sauce, and everything turned out great. My wife doesn't even like zucchini, but said it looked good and smelled good, so she tried it and loved it! I'm sure that this would be even better if I had spent the extra money on fresh herbs and cheese, but don't let a couple of pricey ingredients stop you from enjoying this great dish. I substituted lower-cost ingredients that you porbably already have in your pantry, and it turned out great anyway.

    This is a fantastic recipe! Saw the recipe on the show and made it for dinner that night. This will definetely be one to add to the collection. Full of flavor and color. Absolutely delicious!

    It is summer and everyone has squash coming out their ears, and most everything else needed in their pantry. It is one of the few receipes that I saw in the morning and made that afternoon. It was very good and very easy!

    I saw Jamie's show yesterday morning and decided I needed to try this recipe.
    Jamie's instructions were perfect. I made the most delicious Carbonara. The zucchini was wonderful with the thyrme blossoms from my garden.
    Thanks Jamie for the teaching technique as well as a beautiful dish.
