    These muffins are absolutely wonderful! I used a pinch more cinnamon. The icing is excellent and a great alternative to the traditional super-sweet stuff.

    I made these muffins this morning and they are fantastic! You get a sweet treat with an antioxidant veggie and a healthy oil too. My husband had his with maple butter on it, wonderful. I too made the frosting with lite sour cream, delicious and fresh tasting. I love Jamies show, fresh veggies and ingredients, right up my alley.

    My husband and I love carrot cake, so decided to try these. I have never worked with squash before and love trying new things.

    These were absolutely the best muffins I have ever made or ever eaten. Not too sweet and the texture is fantastic.

    I used only a half cup of oil and a half cup of applesauce, and used half wheat flour instead of regular. Perfect!

    Also, I added about 4 oz reduced fat cream cheese to the frosting because I had it in the fridge. This thickened it up a bit. I love the tartness - it is a perfect complement to the muffins.

    I just watched the show and I love it. Jamie you explain everything so well and you make me want to try this recipe. I am going to buy the ingredients and make the muffins. They look wonderful and sound delicious. Can't wait to cook them. I will be watching your shows. Tell Food Network to put them on the HD channel.

    I, too...am delighted w/this new show! He is the real deal...Please keep him around! I can't wait to see more. I plan to try both the muffins and the soup next wkend. Jamie was just awesome!!

    My origional post got deleted so I'll just keep this short. TRY THEM! After the show aired I decided to go and get everything in order to make them and even though it became a little fussy since my processor is small, they still weren't that hard to make at all. I loved these dearly and can't rave enough. Go ahead and try them because they are awesome. And no, you can't taste the olive oil. Only a tad if you taste the batter, but once you make bake them they are perfect and the sour cream topping couldn't be more brilliant. Thanks Jamie!

    This soup looks wonderful but mostly I want to review the show. I loved it! I like that it was so informative and just looks so real. No snappy music, no matching the host with the set and no way to skinny cook with half her chest showing!!!

    Thank you Jamie for a real cooking show.
