The marinade was too strong and the salsa alittle greasy. I ended up just cooking the salsa with a few other veggies and that came out better.

i boiled the sweet potatos first then baked them in foil with a little butter. that was delicious.

    overall, an ok recipe.

The combination of flavors in this recipe was outstanding! The red pepper salsa (I left out the mint since it's not a family favorite was the perfect crunchy complement to the salmon's smooth marinated texture. And the sweet potatoes rounded out the meal with excellent balance in taste and color. We will most definitely be making this a family favorite!
