First - I love your shows. BUT...and I did the recipe exactly (almost as you did on the show - and how you wrote it up in this online recipe...BUT...I'm about to have a coronary. I used 5 slices of bacon instead of 12 and even so my greatest fear came true. The bread on the bottom of the roasting pan was drowned fat. Totally covered in bubbling fat. Fat from the chicken, fat from the bacon. Had to drain the croutons on paper towel and then put them back into a dry saute pan to try to toast them up. They were soggy grease. Loved the dressing but this was way too heavy, way too rich. Was hard to finish a modest helping. Next time I think I'll just cook the chicken by itself. Cook the bacon by itself. Cook the croutons by themselves. Then toss everything together. You mentioned on the show not to use chicken breast however - next time I think I will. It will bring a lightness. Even the chicken legs felt too heavy, too rich. I love how you literally throw stuff together on the show but the recipe wasn't true to what you aired. This was a lot of work for a disappointing result. But I'll keep watching.

I printed this recipe about a year ago after seeing it made on TV and just got around to trying it today for my husband's father's day lunch...OMG!! It is so easy to make unlike some recipes you have to make a time or two to tweak. Spot on and one of the best salads we've ever had. The whole family wolfed it down. I used chicken thighs as the veins in legs kind of gross me out (I know, I am weird. I trimmed them of a lot of the fat and left a square of skin across the top of them which was ample for flavoring the croutons. Also, just a note that I used regular bacon and it is advisable to find thin sliced bacon or pancetta so it will really crisp up. The regular bacon worked too...just took longer to achieve that. I had cut it in strips and eliminated the big blob of fat on the end of each strip. Those croutons were about the best bread-related item I've ever had. Definite do-over when we feel like splurging on the fat involved...so not a weekly dish.

When I saw this episode, I couldn't wait to make the recipe. Don't let the title fool you, it's nothing short of spectacular. I love the series and couldn't wait to buy the book. A real family favorite.

My family always seems to love Jaime's recipes and this was no exception. I have made this Chicken Ceasar Salad recipe three times so far. The croutons are to die for, in fact my husband asked if there was any way to keep a constant supply on stock. He kept munching on them so I hardly had enough when it came time for the chicken salad! I've made the recipe with pancetta and also with jamon Serrano and both give wonderful flavor to the croutons and chicken, though I really love the depth you get from the Serrano. I know Jaime makes this with chicken legs, but I actually prefer white meat so I throw some breast pieces in as well and they come out very juicy, not dry at all. This rustic recipe is definitely a family favorite!

This is the BEST salad recipe ever! i love how rustic it is : i've made it for friends and family and they all loved it... i posted a link the to the recipe on my facebook too, and my friend made it for her husband, he said it has to be added to the dinner rotation! i didn't make the dressing tho, i just bought a good caesar dressing, and i also added some roma tomatoes to the salad in the end just to add another flavor in.... i will defiantly be making this recipe for years to come! : ...you're an awesome chef Jamie, keep up the good work!!

This was really good and the croutons were amazing. I thought the olive oil in the dressing overpowered it a bit. I followed the directions exactly. Maybe my oil was not the best kind?? The chicken and bacon were great too!

originally i wanted to make the entire recipe, but time escaped me so i had to use bottled Brianna's asiago casesar dressing (which is the best bottled caeser IMO

let me just tell you how AMAZING the chicken, bacon and croutons were. im still eating the croutons for breakfast - they really soaked up the chicken & bacon juices and taste insane even the day after.

the chicken and bacon bits were the best part! it was so moist and flavorful and i will never make a caesar salad without this recipe again!!

    HIGHLYYYYYYYY RECOMMENDED!!!

when i saw this episode, i found myself drooling. literally. i finally had the opportunity to make it tonight, and not surprisingly... i am drooling. this dish is absolutely fantastic. as it baked in the oven, my kitchen was filled with the aromatic loveliness of rosemary, not to mention the delicious pancetta that would finish off the roasting experience. the only thing i had to change was the dressing. i didn't have creme fraiche, so i used a heaping teaspoon of sour cream. i also added about 1/2 tsp of salt. i blame wimpy anchovies. oh, and at the end, i also removed the chicken and roasted the croutons for another 10 minutes to crisp them up a bit more. if i could give 10 stars, i would. this was hands down my favorite caesar recipe EVER.

This salad was absolutely delicious! I loved the croutons and the dressing...and so did my guests. Jamie has an amazing way of cooking. I love his shows and hope that he gets another show on FN.
