You can create up to five timers

Ingredients

  • Good handful thyme, leaves left on stalks
  • Pinch cumin seeds
  • Small handful fresh oregano
  • 2 cloves garlic, skin left on
  • Pinch Maldon sea salt
  • 2 tablespoons extra-virgin olive oil
  • 1 lemon, zested and chopped
  • 8 (8 ounce) sirloin steaks

Directions

In a pestle and mortar, smash up the thyme, cumin seeds, oregano, garlic, and salt. Using your fist, bash the steaks to make them slightly thinner and larger. Add the olive oil and lemon zest to the spicy rub and smear this into each steak.

The steaks can marinate for 20 minutes to 8 hours. Fry the steaks in a pan, the time will obviously depend on how you like your steak.

Make sure you let the steaks rest for 5 minutes before you serve them, they will be much juicier.

    I selected this one because it was the simplest and I had no time to cook. The only fresh ingredient I had was the garlic and lemon/lime? zest . It was the green one. The other ingredient came out of the jars and the salt was regular iodized salt. I tried to smash the condiments the best I could and the meat, well, could not bash it because it was frozen; but I tried. Rubbed everything and let it set for 20 minutes. And voila! After I cooked it, could not believe it had such an excellent flavor when I only had a couple of fresh ingredients and the meat was frozen when tossed it in the pan! One day, I will try with all fresh ingredients. My meat came from a grass fed cow.
