To all the reviewers, did you take the skin off the squash? On the show, he says to leave it on?

BTW: Jamie is brilliant, one of the best shows on this network.

This recipe was really easy and I thought it was strong competition with some NYC restaurants...

I did, however, get lazy and omit the celery and used cayenne pepper instead of a red chile (lazy/cheap move.

Its a good thing I watched the show first. Jamie used a pressure cooker to make the soup so he saved the sage oil to make the croutons which I think is critical. (Otherwise I think the subtle safe flavor is lost....although the fried sage leaves could almost substitute for potato chips, they are SO good! I made the soup as listed but added about a cup of heavy cream at the end to make it more silky. Make extra croutons as they really are wonderful.

I LOVE Butternut Squash and using this recipe I made the best butternut squash soup I have ever had and I couldn't believe that there was no cream or butter! The sage and oil combo is fantastic and the crouton accompaniment is perfect. You will love this soup. I will be using this method from now on.

where is the warm duck recipe. The other recipes are very enticing but I haven't had a chance to try yet. Please include all recipes that are presented on the show. I have some of his other recipes that are wonderful! I am looking forward to viewing his show but will discontinue if the recipes are not included. by the way, the same happened when Nigella's show first appeared. I had the same thoughts about that alsol.
