    Thais don't use the technique of mixing their "dressing". What you need is a mortar and pestle. First, pound some chilies and garlic. Add raw green beans and bruise them a bit. Add the papaya, carrots and fish sauce and lime juice and pound a bit more. Add sugar, dried shrimp and some tomatoes and pound gently, From here, adjust seasoning. The recipe lists only 4 tablespoons of lime juice. You will find that more will be necessary. Like anything else, there are many variations. What I have listed is more from the Issan region (less sweet, more sour. An awesome variation is to leave the ripe papaya out since it is difficult to find and just use raw green beans. Just make sure to brusie the heck out of them.
