    Awesome!! Next time I will use a cheaper beer and less mustard. I felt that I outdid myself! My friends were very impressed!!

    Toss the cheese in flour and it will not clump. If the beer is overpowering cut back on it. Also if you watched the show he uses a cheap light beer. Don't buy an expensive beer. The stronger the flavor of beer the stronger of beer taste in the soup people.

    I also LOVE Jeff's recipes but after reading these reviews I decided to make something else since the cheeses are a little expensive if there's the chance I may end up disappointed as some here have. Everything else I have tried of his recipes have been wonderful and THE SHOW! LOVE IT with his humor!!

    I used a Blue Moon Pumpkin ale, and an applewood smoked gouda... It was fabulous. My mother did say that she had to cut the thickness of it with milk a day or two later, but it was still delicious. THe first time I made it, I added 2% shredded... Don't do that-- Add Full Fat Cheddar or else the soup is a little grainy (but still delish! I also didn't use an immersion blender, but rather got out the old fashioned blender...yes it makes for more dirty dishes, but it's worth it in the end.

    Followed the recipe to a T. Purchased top notch cheeses, nice pale ale. All you could taste was the beer. Way too overpowering. I am an accomplished cook & even dicing tiny, I had to puree w/ the immersion blender for quite awhile. And again when the gruyere wouldn't blend in either. I would try & rework this, but it was pretty expensive (I spent $20 just on cheese so I think I will just look for another recipe. With 7 of us eating, 5 didn't like it at all & 2 said it was "ok".
    Now - the crostini's YUM! Simple to make, way better than store bought. We used them for a warm french onion dip.

    First of all, let me say that I LOVE Jeff. I don't think I've ever received more compliments on a meal than I do for making his Greek Tacos. But this soup did not pan out well for me. The veggies didn't fully blend. The beer was too strong. And, while the cheddar blended in just fine, the gruyere (while delicious did not blend into the soup. I stirred for at least 20 minutes, and I was still left with chunks of cheese. I would try any of his other recipes, but I will not be attempting to make this soup again.
