Chunky Mango Guacamole

Ingredients
  • 3 medium ripe avocados
  • Salt and freshly cracked black pepper
  • 2 to 3 limes, juiced
  • 1/4 cup fresh cilantro leaves, minced
  • 2 tablespoons minced red onion
  • 1 clove garlic, grated
  • 1 ripe mango, peeled and diced
  • 1/2 to 1 small habanero (ribs and seeds removed unless you want it hot!), minced
  • 1/4 red bell pepper, diced
Directions

Scoop the avocado flesh into a bowl. Mash the avocados and season with salt, pepper and lime juice. Stir in the cilantro, onions, garlic, mango, habanero and red bell pepper. Taste and adjust the seasoning if necessary.

OMG! This was awesome! I almost didn't try it because I already LOVE LOVE LOVE my usual guac recipe. I'm not a big fan of mango, but I've been grilling with cherries alot lately and the mango peaked my interest. I'm so glad I tried it - I absolutely love it! I did, like many others here, use a jalepeno instead of a habnero - only because I grow pepers and none of my habaneros are ready for picking yet. I am a big fan of good old fashion guacamole, but the idea of adding mango sounded exciting. I made this just last night and it was excellent! I am not a fan of heat so I left the hot pepper out. I also omitted the red pepper because it was a bit expensive at my local market. The guac was still delicious! Be sure to keep an eye out for a ripe mango though.
