    Fantastic. I didn't find it too salty. Great on sandwiches and hot dogs. I actually pureed some with onion and added it to my meatball recipe. It was delicious!

    I love Giardiniera - can't keep enough of it in the fridge. I decided to make this, to see how it tastes freshly made, compared to the store bought ones. This is really good. Just like others have mentioned, the salt is way too much, so will cut down on the salt in the brine next time. Aside from that, I like heat, so I used 10 peppers, and its perfect. I also like being able to adjust the amount of the veggies. Oh by the way, aside from the salt, I used the measurements as a guide line - this is one of those recipes that can't be messed up.

    Fabulous recipe! Well worth the time to make. I've used it on everything from grilled cheese sandwiches to pizza--the possibilities are endless. I like using it as a topping on crackers with cream cheese.

    This is a great mixture, and you can adjust the level of heat. I will cut down on the salt the next time. Overall it is great and a common condiment in my refriderator.

    This recipe is the bomb. My husband loves it. I will have to make another jar soon as the one I just made is disappearing fast. I did take another reviewer's suggestion to add 1/4 cup of vinegar.

    While I like the way it turned out, I too used coarse kosher salt! 2T. to the 2 cups of water and it was just right! I think the oil was over kill and I did not like the taste of all canola, so next time I will use 3/4 cup canola and 3/4 cup extra virgin olive oil. I had rather large Serrano's and I used all 8, but ended up picking some of the slices out as I new my husband wouldn't even try it if I left them all in! All in all, not bad! Beats the vinegary store stuff!!!

    I've never tried giardiniera before and bought a jar at the market to just get an idea what to expect. Jeff's sounded so good I had to try it, because the store-bought version was anything but. So I made my first batch this week and love it. Great accompaniment to all kinds of dishes, love the crunciness and heat. Will cut the salt some, I did rinse well and it's okay as is, but a little less salty would be fine for me. I added two serranos and will do four next time, but there will definitely be a jar or two of this in my fridge from now on. Thank you, Jeff! Delicious!!

    After I made the fried meatloaf sandwiches, I searched for additional ways to use this giardiniera. This stuff shines on a Hawaiian bread sandwich roll with cream cheese, green bell pepper, and tomato slices. Yum!

    I had never heard of giadiniera but Jeff made it look so great my husband just had to make it. We loved it. Personally, I liked that it came out salty. I was putting that stuff on everything....sandwiches, pizza, salads too. We will make this again!
