Jalapeno Popper Grilled Cheese

Ingredients
  • 6 jalapenos, cut in half lengthwise
  • 2 tablespoons olive oil
  • Salt and freshly cracked black pepper
  • 1 cup mascarpone cheese
  • 1 cup shredded aged Cheddar
  • 8 slices country white bread
  • 2 tablespoons salted butter
Directions

Preheat the oven to 425 degrees F. Line a baking sheet with parchment paper.

Toss the jalapenos with 1 tablespoon olive oil, some salt and pepper and lay skin-side up on the prepared baking sheet. Bake until the skin is blistered, 10 to15 minutes. Place in a plastic baggie for about 5 minutes loosen the skin. Pull off the skin, remove the majority of seeds and ribs, and slice. Set aside.

Spread the mascarpone on 4 slices of bread and divide the Cheddar among the other 4 slices. Divide the sliced jalapenos among the 4 sandwiches. Close, and butter both sides of the bread.

Heat half of the remaining oil on a flat griddle over medium heat. Grill one side of the sandwiches until golden. Remove, heat the remaining oil and repeat with the second side until golden and the insides are all melty and gooey.

    Yummy, but spicy. THIS SEASON I recommend going easy on the jalepenos. Apparently jalepenos are spicier than usual this season due to some drought conditions. Made this for dinner for some foodies, and they loved it. However, I would think twice before making for someone who is spicy-heat sensitive, or, at the very least I would cut down on the jalepeno in that person's sandwich. Will make again!
    I just made this for lunch. It was so good. I had to tweak it a little based on what I had in the house. I used cream cheese, not mascarpone, chopped jalapenos that I had frozen, homemade bread and in addition to the cheddar I used a slice of American cheese. Best grilled cheese ever.
    I made this tonight. I used some hatch peppers that we had charred before freezing them. I made a mascarpone substitute recipe I got from another site. It was amazing. This is a keeper.

    Best idea for a grilled cheese EVER. You can completely change the spiciness of the sandwich depending on how many peppers you use. I loved the sweetness and texture of a multigrain bread. Have tried both cream cheese and mascarpone. Both were equally delicious! I dream about this sandwich!
    Such a good idea. I simplified this because I didn't want to run out to the store. Used good ole white bread, spread butter on one side of each. I mixed the roasted jalepenos with cream cheese and spread that on the unbuttered side of the bread and topped it off with a good ole American cheese slice. I used 1/4 cup cream cheese and 2 peppers. Might add a bit more jalepeno next time. Good taste, even dumbed down!!!
    Ok. Add me to the 5 star reviewers of this recipe. Whenever someone says, as Jeff did, that hey had "an epiphany" when they created something always trust that it will be great! I was planning on using a country white as in the recipe but I found Russian rye with those litttle black charnushka seeds and couldn't resist. This is an excellent sandwich. It was delicious. My whole family loved it. Since there is so much cheese and bread, don't worry about the heat of the jalapenos if that makes you nervous. You really need to add more to the sandwich than you think. I used 2 per sandwich and nobody thought they were too spicy.

    This is crazy good. The balance of spicy and creamy absolutely hits the spot and the marscapone is an outstanding touch and brings a real creaminess that's lacking in other grilled cheese variations. For those afraid of using that many jalapenos, don't be! I was far too timid about it when I first tried the recipe and the few jalapenos I used vanished in the richness of the cheeses and sweet country white bread. That creamy sweetness really demands that many jalapenos to cut through it, and honestly, it still won't be too spicy. In fact, if you're a big spice fan you may even want to use more than the recipe calls for. Wonderful way to make a grilled cheese something truly memorable.

    WOWZA! Spicy, cheesy goodness! Made a few changes because of what I had on hand. Followed the jalapeno roasting. Kept in most of the ribs and seeds as I like things hot. Used the cheddar. Had cream cheese with chives and onions so used that, which got me thinking next time I might add caramelized onions. Threw on some leftover bacon. Used clarified butter (omitted the oil on Trader Joe's sourdough. HEAVEN! Bacon jalapeno poppers on a sandwich!
    Wow! What a delicious, easy and ingenious idea for a sandwich. I've never roasted jalapenos before and they were so tasty in the sandwich. I think I'll keep them on hand for a quick and wonderful sandwich. Thanks Jeff, I'm loving your sandwich recipes!
    superb, all i can say. perfection
    Like others, we used cream cheese, because the first three stores I checked didn't carry marscapone. We didn't miss it, since we've never tasted it before, and every popper I ever had had cream cheese in it any way. I deseeded and deveined the peppers before roasting, and did not oil, salt or pepper them, since they would be peeled anyway. Used butter only to grill, no oil. I can see one or the other, but not both. Even with the streamlined recipe, my whole family agreed, these were the best grilled cheese sandwiches EVER!
    Definitely sour dough bread and how about some very crispy crumbled bacon. YUM! That will make it five stars.

    Best grilled cheese ever! I used cream cheese instead because I couldn't find mascarpone. I would warn that ALL seeds should be removed...ones that weren't burned my mouth so much, I couldn't even taste the rest of the bite.
    These were so ridiculously good & easy! Followed the recipe except diced the jalapenos, the mascapone was perfect on this sandwich. I'm getting hungry for another one just thinking about it
    Made 8/7/12 ....Really delicious & easy 2 make.... Just next time I'm taking the peppers & both cheeses & putting them in the food processor .....2 get a better consistency.....Then spreading it on the bread .... Some bites no heat ... Some bites a lot of heat.....

    What a great recipe! The genius is the simplicity. I had to use cream cheese and sourdough bread just because I didn't want to go to the store and I'm glad I did. This tasted just like a popper.....soooooo yummy.

    This is a brilliant take on the grilled cheese, which is a staple in our house. And i've never been patient enough to make poppers. This really captures two beautiful concepts-- the total is greater than the sum of its parts: crispy, then creamy, tangy, chewy. Wow. Great one Jeff! Thanks. Switch around your cheeses and breads if you must, but stay true to the instructions on blistering the japapeno.
    Delicious! Other than using sourdough bread, I followed the recipe exactly. It really does taste like a jalapeno popper but in sandwich form. For those who enjoy grilled cheese sandwiches, I highly suggest this recipe!
    Yummy! I made this for lunch today and boy was it good. Creamy, gooey and delicious. I have a newly planted pepper plant so now I know what I can make with them. Thanks Jeff for a great recipe.
