    Used cream cheese instead of marscapone. I also added bacon. CRAZY GOOD! The girlfriend keeps asking me to make more...

    This is crazy good. The balance of spicy and creamy absolutely hits the spot and the marscapone is an outstanding touch and brings a real creaminess that's lacking in other grilled cheese variations. For those afraid of using that many jalapenos, don't be! I was far too timid about it when I first tried the recipe and the few jalapenos I used vanished in the richness of the cheeses and sweet country white bread. That creamy sweetness really demands that many jalapenos to cut through it, and honestly, it still won't be too spicy. In fact, if you're a big spice fan you may even want to use more than the recipe calls for. Wonderful way to make a grilled cheese something truly memorable.

    WOWZA! Spicy, cheesy goodness! Made a few changes because of what I had on hand. Followed the jalapeno roasting. Kept in most of the ribs and seeds as I like things hot. Used the cheddar. Had cream cheese with chives and onions so used that, which got me thinking next time I might add caramelized onions. Threw on some leftover bacon. Used clarified butter (omitted the oil on Trader Joe's sourdough. HEAVEN! Bacon jalapeno poppers on a sandwich!

    Wow! What a delicious, easy and ingenious idea for a sandwich. I've never roasted jalapenos before and they were so tasty in the sandwich. I think I'll keep them on hand for a quick and wonderful sandwich. Thanks Jeff, I'm loving your sandwich recipes!

    Ok. Add me to the 5 star reviewers of this recipe. Whenever someone says, as Jeff did, that hey had "an epiphany" when they created something always trust that it will be great! I was planning on using a country white as in the recipe but I found Russian rye with those litttle black charnushka seeds and couldn't resist. This is an excellent sandwich. It was delicious. My whole family loved it. Since there is so much cheese and bread, don't worry about the heat of the jalapenos if that makes you nervous. You really need to ad more to the sandwich than you think. I used 2 per sandwich and nobody thought they were too spicy.

    Like others, we used cream cheese, because the first three stores I checked didn't carry marscapone. We didn't miss it, since we've never tasted it before, and every popper I ever had had cream cheese in it any way. I deseeded and deveined the peppers before roasting, and did not oil, salt or pepper them, since they would be peeled anyway. Used butter only to grill, no oil. I can see one or the other, but not both. Even with the streamlined recipe, my whole family agreed, these were the best grilled cheese sandwiches EVER!

    Definitely sour dough bread and how about some very crispy crumbled bacon. YUM! That will make it five stars.
