I had never seen anyone cook plantains before but really liked Jeff's method. I decided to use Jeff's plantains as a base for Ina's balsamic strawberries rather than using a cake. They turned out fabulous and went well with the strawberries. The only thing missing was a dollop of whipped cream! Next up, using the plantains for a vegetarian sandwich. Thanks Jeff!

OK, so I was only able to make the tostones and the mayo, due to a little glitch in the day's planning, BUT - talk about awesome quick snack! Tostones (well salted and garlic-powdered dipped in the garlic mayo...OMG...Oh Jeffy-poo, please come to my house and cook for us!

This recipe was the best! I consider myself to be a professional eater as I have been eating all of my life and I can honestly say that this sandwich was the best sandwich I have ever eaten. It was amazingly simple yet the flavors were diverse. Amazing! Thanks Jeff You are the Sandwich King!

I love this sandwich! Since I found out I have celiac disease I've taken sandwiches out of my diet, because the non-gluten breads just don't do it for me. Who would have thought a plantain would make such incredible "bread"? The garlic mayo was great too.

The sandwich was great. The garlic mayo was the bomb! Will be making it to use on other sandwiches and as a dip.

We've never had a sandwich made with plantains (no bread?!, but it was awesome! Garlic mayo was a nice touch (we doubled the garlic and spices. YUM!!!
