    I was a little intimidated by doing this since every time I made onion rings, fried or in the oven, I ended up with soggy ones and a big mess. With this recipe, they turned out perfect. Adding the oil to the Panko breadcrumbs did the trick as they were crunchy on the outside, tender on the inside, not greasy at all, very flavorful, easy to prepare and no mess at the end. Will be making these again!!!

    I was skeptical that these would be as crunchy as Jeff claimed. I have to say I was amazed at how CRUNCHY and yummy these are! For my family's taste they were slighty too salty, so next time I make them, I will cut back the salt to 3 teaspoons. They are a bit messy to make, but well worth it anyway. I will definitely be making them again!

    Cruchy, light and mild onion flavor.
    The recipe was easy, I used the breading philosophy, keep one hand dry and one hand wet, to avoid getting the crumbs all gooey.
    Will definitely make again, but will use regular yellow onions since we like a stronger onion flavor.

    I had to substitute a Vidalia onion for the Maui and since I can't have dairy, I used soy milk with a teaspoon of cider vinegar in place of the buttermilk. I only used half the salt and I thought that was plenty. These took a lot longer than 10 minutes of prep time like the recipe said, but it was simple to do just very messy. The only issue I had was that the panko mixture got very wet after just a few onion rings and it stopped sticking to the onions. The texture of these out of the oven was great and the flavor was very good. Even my hubby, who normally doesn't like onion rings, thought they were good.

    Jeff, I am very limited on my fats and also am a diabetic. But your onion rings gave the opportuniity to once again enjoy onion rings with a sndwich or steak. WOW! Keep it uup.

    I LOVE onion rings but i hate that they are fried, but not these! I seen the sandwich king make these oven fried onion rings on easter morning, and i just had to make them. My whole family became a onion ring lover all over again.

    I made these last night with the chorizo sandwiches. They were tasty, but took too long to prep (longer than 10 minutes for me and actually get in the oven! I love the crunch and they were much healthier than fried. I used the avacado crema from the sandwich recipe as a dipping sauce and it was great.

    OMG! I keep powdered buttermilk on hand just in case of emergency "must make" recipes like this! Real buttermilk will only improve the flavor. The smoked paprika gives a special flavor and the panko crumbs a special crunch. Unfortunately there are no leftovers for tomorrow's lunches!
