Very good! I wonder if similar results can be had by just using tomato juice? I also thought the final vinaigrette was a little too salty so I had to add a little more sugar. The recipe calls for 2 teaspoons of salt to macerate the tomato.... maybe less salt would be good.

so easy to make and I like making my own salad dressing so I can control the sodium and fat content. Delicious and zingy!

I saw the show this morning and couldn't wait to try it so I made it this afternoon. It was delicious!! Nice and light and fresh. This might be my new favorite dressing. My kids and husband also loved it!
