We used skirt steak and all ingredients for the marinade, but decided to cut back on the cumin and added more cayenne (we like things HOT. The meat turned out very tender and both my husband and I LOVED all of the flavors! For the chimichurri sauce, we used a whole jalapeno with seeds and ribs… it still could have used another jalapeno. I added a bit of yellow and orange pepper to the sauce since I had extra. Came out great! We used whole wheat pita bread that was already sliced and pocketed. The havarti was an awesome touch! We served this along side Jeff's Chunky Mango Guacamole. Delish! We will definitely be making this dish again and again! Thanks!!! :

I made this with chicken instead of steak and it was very yummy. I added the lesser amount of cayenne pepper but wish I had added more. I think the chimichurri sauce could have used a little more jalepeno too. My husband loved this dish. The havarti cheese was very tasty with it too. I was worried because it seemed sort of strange, but yum yum.

I used skirt steak and marinated it for 24 hours. It was very tough, but the taste was excellent. In the future, I would use flank steak.
