Fabulous, but too much butter. Made it a second time was even better! Be sure to butter the bread, NOT the pan.

Very tasty! I never dreamed I would spend so much time and effort to make a "grilled cheese" but it was definitely worth it. The toasted almonds are a must for added "crunch". I did substitute Havarti for the Manchego. Everyone raved about it!! Nice change of pace!

Absolutely delicious and surprising! I used monterey jack cheese b/c I didn't have manchego and left out almonds. It was so good. I'll make it again for sure!

This is definately a "big-girl" grilled cheese sandwich and a far cry from the american cheese grilled cheese meant for kiddos. I had never made carmelized onions before and now I am completely in love. I used chipotle chile powder and the sweet-smokey-heat combination on the squash was heavenly. Eat slowly and savor!

Amazing, amazing! My husband crinkled up his nose a bit when I told him what I was making but after his first bite he was in love. This is a wonderful sandwich, the onions are wonderful and do not skip the almonds. They add a whole new layer or flavor and nice bit of crunch.

This was DELICIOUS! The balsamic onions were incredible (I could have eaten them all with a spoon, and the combination of the cheese and squash and cheese was unbelievably good. Simply a perfect meal. I made it just last week, and I am making it again tomorrow! I had to leave out the almonds, but the sandwich was still perfect.
