I made this last night and the smoked paprika and Chorizo sausage just pop. Wonderful flavor. Very different. The manchego cheese was a great ending. Perfect dish. I am ready for more recipes. Thanks Jeffrey.

I made this for company & not only did it get devoured , I had to copy out the recipe for them to take home. One nice thing about this recipe is it's great for one person. Next time I'm going to freeze the meat sauce into individual portions. It will be an easy week day dinner to whip up after work.
Since I couldn't find Manchego cheese, so I substituted Cojita, which tastes like a combination of Mozzarella and Parmesan and will be making a permanent home in my kitchen.

I knew we hadn't seen the last of the REAL star. This recipe is awesome. I tried it over small curly edge noodles (I forget the name. Perfect!
