This is easily one of the best cole slaws ever! All the ingredients worked wonderfully together. We used poblano peppers instead of green bell peppers because they are awesome. The dressing for the slaw could be used as a salad dressing, chip dip or eaten with a spoon! For those unfamiliar a Jicama tastes like a cross between an apple and a potato. It sounds weird but its amazing. Disregard the 2 star ratting because this recipie is awesome. Be mindful of your salt and pepper, a 1/4 tsp more salt can make a HUGE difference (from bland to WOW. We paired this recipe with halibut fish tacos for an incredible Cinco de Mayo meal. Try it you will love it!

I added some sweetener which helped the taste, but without it, the flavor just wasn't there.
