Ingredients
- 1 medium jicama
- 2 cups angel hair cole slaw
- 1 (11-ounce) can Mandarin orange segments, drained, 1/4 cup juice reserved
- 1/4 cup mayonnaise
- 3 tablespoons apple cider vinegar
- 1/4 teaspoon fajita seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 bunch fresh cilantro, leaves chopped
Directions
Use a grater to shred 2 cups of jicama into a large bowl. Add cole slaw and Mandarin orange segments; set aside.
In a small bowl, whisk together reserved Mandarin juice, mayonnaise, vinegar, fajita seasoning, salt, and pepper.
Pour dressing over jicama mixture. Toss to mix thoroughly. Top with cilantro.
Serve immediately.

I'm not very experienced with jicama, so I'll give this slaw 4 stars. The slaw was terrific- it was the bitterness of the jicama my husband and I didn't care for.

This is a great tasty different way to make slaw. Jicama in slaw? Yes, Jicama in slaw and don't forget those mandarin oranges, yum, yum, yum. My husband not a big fan of slaw but he really enjoyed it along with his new favorit Turkey burger (Apple Maple Turkey burger and sweet potato fries. Great meal. Your family is going to love this dinner.

The slaw was yummy, crunchy and different. The jicama and mandarin oranges add a great new taste. However, I think it tasted better the next day. The slaw was a a little less crunchy, but still good. This slaw is perfect for bar-ba-ques.
