Jicama Slaw

Yield:
6 servings
Ingredients
  • 5 cups shredded Napa cabbage
  • 1 cup shredded carrots
  • 2 cups matchstick cut jicama
  • 1/2 cup finely diced red onion
  • 1/4 cup chopped fresh parsley
  • 3 Tbs. celery seeds
  • 1 Tbs. sugar
  • 1/4 cup apple cider vinegar
  • 1/2 cup canola oil
  • salt and pepper to taste
Directions
  • Combine all ingredients in a large mixing bowl and toss well. Cover and set aside until serving.
