Cranberry Walnut Quinoa Salad

1 cup quinoa

1 cup dried cranberries

1 cup frozen green beans, defrosted

1/4 cup walnuts, chopped

1/4 cup green onions, sliced

1/4 cup balsamic vinegar

1 1/2 tablespoons olive oil

4 cloves garlic, minced

1/2 teaspoon salt

1/4 teaspoon pepper

Combine quinoa with 2 cups water in a medium saucepan and bring to a boil over high heat. Reduce heat to a simmer, cover, and continue cooking until all water is absorbed.

In a medium bowl, combine cooked quinoa, dried cranberries, green beans, walnuts, and green onions until well mixed. In a small bowl, whisk the balsamic vinegar, olive oil, and garlic until well blended. Pour over the quinoa mixture. Toss until well blended. Season with salt and pepper, to taste. Chill in the refrigerator for at least 30 minutes before serving

    AMAZING BURST OF FLAVOUR!

    I had quinoa once before and I really enjoyed it, after trying this recipe I know LOVE it. I love the way the cranberries... compliment the rest of the flavours, there is increadible balance in this recipe. I added a few more things and opted out of the green beans but the base flavour was there. I added finely diced cucumber, red onion, green onions, parsley and a touch of lime. This is now one of my favourite dishes that the whole family loves.Read more

    Simply Superb and a Great Passover Side!

    I was looking for a side to make for Passover (since quinoa is allowed during the holiday) and this totally fit the bill. I... have made quinoa before with other recipes that were a bit bland. However, this is packed full of flavor and is an excellent, healthy, easy to prepare side dish that I would highly recommend year round. I used steamed broccoli florets instead of the green beans and boiled the quinoa in chicken stock for extra flavor and was thrilled with the outcome. By the way, I was a bit afraid of all that raw garlic being overpowering, but I mashed it down to a paste to avoid any chunky bits and it was right on! I will be making this often and year round!     This is a fantastic way to introduce your family to quinoa -- my 14 yr old twins even liked it! I left off the green beans... (served as a side) and it was GREAT. Would also be good with some feta or blue cheese tossed in. Leftovers make a perfect lunch --- I'll be making this often!Read more

    I used this recipe and whatever I had in the house one day. Instead of green beans I used blanched, fresh broccoli; instead... of walnuts, I used toasted almonds; instead of green onion, I used diced red onion - It was so good and a great snack to have in the fridge. I will definitely be making this again - perhaps i'll even follow the recipe as its written - or not. Better than I expected it to be. My finicky wife loved it too.Read more
