Ingredients

  • 1/2 pound bay scallops
  • 1/2 cup sliced green onions
  • 1/2 cup chopped fresh cilantro leaves
  • 1/2 tablespoon peeled and grated fresh ginger
  • 3 limes, juiced
  • 1 large mango, peeled, seeded, and diced
  • 1 head butter lettuce, cleaned

Directions

In a large bowl, mix the scallops, green onions, cilantro, ginger, and lime juice until well combined. Cover and refrigerate for at least 1 hour. Remove the scallop mixture from the refrigerator and mix in the mango until well combined. Divide the butter lettuce leaves equally among 4 plates. Divide the scallop mixture evenly over top the lettuce and serve immediately.

    Made this last week and added avocado, jicima, dakon sprouts, chopped reconstituted thick seaweed (it was in my cupboard) and... lots of extra cialntro and fresh ginger. It needed more salt too. I used fresh (raw) shrimp, scallops, sushi quality tuna and orange roughy. Followed the other instructions pretty closely. I would skip the tuna next time, it was a little too heavy (?) but all the other fish were delightful together. Total raves on such a simple dish! You will LOVE this.Read more
